Slice 4 cleaned chicken breasts in half (to fit the size of the slider buns).
In a bowl, season the chicken with salt, pepper, cayenne, and thyme. Then pour in the buttermilk. Let the chicken marinate for 2 – 4 hours.
Next, add half of each seasoning to your flour mix in one bowl and the other half to the breadcrumb mix. This will be your dredging station.
Remove the chicken from the buttermilk. Dip first in the flour, then in the breadcrumb mix for extra crispiness. If you are frying this chicken, flour alone will be enough. Panko adds a nice crunch to breaded baked chicken.
Place each piece of chicken on a baking rack, for optimal crispness. Then bake in an oven preheated at 400 degrees. For about 20 minutes.
Mix melted butter and Truff hot Sauce in a bowl then brush to cover chicken on both sides.
Pop the chicken back into the oven for 5 minutes.
Toast your slider buns, add a bed of lettuce, then the chicken breast. Add Truff spicy mayo to the top bun and enjoy.
