Cheesy Chorizo Jalapeno Poppers

Whoever you make these jalapeno poppers for will thank you. This appetizer is one of the most popular because it’s cheesy, spicy, smoky, and they come in poppable bite-sized pieces. This is another easy-to-make recipe idea that will only take a few minutes of prep time and just about 10 minutes in the oven. If you are hosting any gamedays or any gathering, I recommend making a few batches of these jalapeno poppers.

Prep The Ingredients

Is de-seeding the jalapenos necessary? In this case, yes because we want as much space inside the Jalapeno as possible. Remove the white ribs inside the jalapeno.

I’m someone who will snack on pickled jalapenos, and I do not find them very spicy, so I do not mind leaving the seeds in here and there. If you are less spice-tolerant, use a spoon or a de-corer to remove the seeds. Be sure to wear gloves for this step!

The same goes for spicy versus mild chorizo. The choice is yours!

Filling Options

Most of the jalapenos that I’ve had were made from a bacon and cream cheese mixture. Those versions are great, and I may share them on this blog in the future, but there’s something about that spicy, smoky, seasoned chorizo that takes these to the next level. 

If you are vegetarian, Trader Joe’s makes great vegan chorizo that will substitute for pork.

Finishing Touches

Top the finished product with bacon, chorizo, green onion, chives, or my favorite, crispy fried onions. I went with some crumbly, salty bacon bits, crispy and delicious fried onions, and some finely chopped green onion for color and brightness for this recipe. Serve them with a bright cilantro lime ranch or chipotle lime mayo, and you are all set to enjoy the little boats of goodness. 


Cheesy Chorizo Jalapeno Poppers

These easy jalapeno poppers stuffed with pepper jack cheese and chorizo make the perfect appetizer. Make a delicious snack that everyone will love with only a few ingredients.

  • 10 Jalapenos
  • 8 oz Smoked Spanish Chorizo
  • 1/2 onion, finely diced
  • 1 cup pepper jack cheese
  • 8 oz softened cream cheese
  • 2 tsp garlic powder
  • 2 tsp onion powder  `


  1. Allow the cream cheese to soften at room temperature.
  2. To a large bowl add the chorizo, diced onion, cream cheese, pepper jack cheese, garlic powder, and onion powder. Mix until well combined.
  3. Slice each jalapeno in half, lengthwise.
  4. Fill each half of the jalapeno with the cheesy chorizo mix. And place in a single layer on a parchment-lined baking tray.
  5. Bake at 450 for 10-15 minutes until the cheese is melted and bubbly.
  6. Serve with your favorite ranch dipping sauce.


**You can serve these as-is, but a little dipping sauce never hurt. Try mixing ranch with a bit of lime juice and cilantro for a quick DIY.

**Be careful with the salt content you can add a pinch of salt to taste, but be mindful
