Cheesy Loaded Chicken Quesadillas

These cheesy chicken quesadillas are the recipe you need for an amazing dinner in a hurry. You cannot go wrong with crispy tortillas filled with delicious gooey, melty cheese, and perfectly seasoned chicken. The only thing that could make this better is enjoying it with some salsa, sour cream, or avocado on the side. 

My biggest pet peeve when ordering quesadillas is that restaurants are sometimes stingy with the filling. Making these at home gives you complete control of how much chicken and cheese you want to add to the middle. I like to add just enough to where I have a little bit of a hard time pressing everything flat. While I’m giving you some guidance on how I made these, I always keep in mind that we all have different preferences, so make sure to customize to make your belly happy. 

This recipe takes under 15 minutes, mainly because I used thin-sliced chicken breasts. You can have a crowd-favorite meal made in no time at all.

I often create my own seasoning mixes. It’s important to have a variety of seasoning in the arsenal so that you can create your own seasoning recipes as well. For this recipe, I used salt, black pepper, garlic powder, onion powder, cumin, coriander, turmeric, parsley, chili powder, and Italian seasoning. 

Because I am using my own blend, I can add more of my favorite flavors and control some of the flavors that I would like to keep in the background.

Using thin sliced chicken cutlets is essential if you are trying to save time.

Cheesy Loaded Chicken Quesadillas

  • 3 thin-sliced chicken breasts
  • 1 tsp salt
  • 1 1tsp pepper
  • 1 1/2 tsp garlic powder
  • 1 tsp onion powder
  • 1/2 tsp cumin
  • 1/4 tsp coriander
  • 1/4 tsp turmeric
  • 1 tsp parsley
  • 1 tsp chili powder
  • 1 tsp Italian seasoning
  • 1 tbsp olive oil
  • 2 tsp minced garlic
  • 1/2 red bell pepper
  • 1/2 green bell pepper
  • 1/2 yellow onion
  • 8 oz  cheddar cheese, grated
  • 2 large tortillas
  • Optional – Pickled Jalapenos

Instructions

  1. Mix all of your dry seasonings together. Then sprinkle generously on the chicken breast, reserving some for the onions and peppers.
  2. Sautee the seasoned chicken for 5 minutes on each side. For a quick meal, I prefer to use thin-sliced chicken cutlets because they cook very quickly. Larger chicken breasts will require more cooking time.
  3. Remove chicken breasts from the pan. Add in minced garlic, then the onions, peppers, and any remaining seasoning. Cook until garlic is fragrant and onions are translucent.
  4. Add large tortillas to a clean pan on medium/low heat. Sprinkle a layer of each across the entire tortilla.
  5. To one side, add the chicken, onions, peppers, and jalapenos if you choose to include them.
  6. Fold the tortilla in half and press down with a spaula.
  7. Serve with sour cream, salsa, and avocados on the side.
