Puff Pastry Mediterranean Pizza with Feta

Here is an easy solution to the weeknight dinner struggle! This puff pastry pizza is a light and flaky alternative to thicker, traditional pizza dough. The combination of feta, tomatoes, olives, and basil is one of my favorites for this type of crust. You are free of course, to customize the toppings to your liking! This recipe is so perfect for a quick and easy lunch or dinner, it’s a great way to use up the ingredients in the refrigerator, and it’s also such a good way to have a custom version for everyone in the family (or yourself).

Let's Talk Toppings

The toppings for this version of flaky puff pastry “pizza” are tomatoes, basil, feta, and olives. If you have tried the viral feta pasta trend, then you may already be familiar with the rich, tangy, salty cheese with Greek origins. Feta is perfect to add richness in place of a traditional stringy mozzarella and is a perfect match for the olives. 

Let’s talk tomatoes! This recipe requires 2 types: fresh and sun-dried. The flavors are so different, I highly recommend both. The sun-dried tomatoes are sweet and pack a much more concentrated tomato flavor than the cherry tomatoes. To balance, the cherry tomatoes give this “pizza” a light fresh taste. 

Finally, the basil. We love basil! This aromatic herb was just made for tomatoes, but be sure to add it last, once the puff pastry is all done cooking. Try to use fresh basil if you can, the flavor is worth it. 



There are so many great alternatives that you can use for toppings – just like a pizza! You can go for the classic pepperoni, or come up with your own combination of ingredients. Here are a few of my suggestions. 

  • Mozzarella, goat cheese, prosciutto, arugula
  • Pesto, Mozzarella, Kale 
  • Mozzarella, shredded beef, caramelized onion, roasted mushrooms  
  • Breakfast pizza: Cheddar, bacon, eggs, onions, peppers

  • 1 puff pastry sheet
  • 46 tbsp tomato sauce
  • Cherry tomatoes
  • Sundried tomatoes
  • Olives
  • Feta Cheese
  • Fresh Basil
  • 2 tbsp butter
  • 2 cloves of garlic


  1. Buy premade puff pastry dough to save yourself the effort. It’s just as good as homemade! Thaw the dough per the instruction on the package.
  2. Preheat oven to 400 degrees.
  3. Unroll the dough onto a foil or parchment-lined baking tray. Leave whole or cut into smaller pieces if making individual pieces/appetizer sizes. Cutting the dough in half or even smaller portions will also allow you to customize the ingredients for multiple people.
  4. Add a layer of tomato sauce, leaving about 1 – 1 1/2 inches free from sauce around the edges. This will be the “crust.”
  5. Cut the cherry tomatoes into quarters and add a layer to the puff pastry. Add on the other toppings including the feta, sundried tomato, and olives.
  6. In a bowl, melt some butter and garlic in the microwave for 30 seconds. You can also use roasted garlic for this step.
  7. Use a brush to brush the free edges of the puff pastry in the garlic butter.
  8. Place the baking tray in the oven for 15 minutes or according to package instructions.
